Strategically placed to overlook Fez, the Merinides Hotel is deservedly popular, so reserve well in advance. The views of Fez el Bali from the pool - nicely raised above the fray - are the best in town.
The rooms are decorated in light tones with glass and wood trim. The restaurant is subdued compared to some of the exotic medina choices, but the cuisine, both international and Moroccan, is carefully prepared and elegantly served.
On the third floor, overlooking the Medina, the hotel's 200-seater Moroccan restaurant is the only five-star hotel restaurant in Fes to offer a full programme of entertainment, including belly dancing.
